Where It All Began

I didn’t grow up dreaming of becoming a chef. In fact, my early relationship with cooking was more about necessity than passion. I was raised in a busy household where takeout menus were used more often than recipe cards. My parents worked long hours, and meals were often quick fixes thrown together in between commutes, homework, and laundry.

But it was in the middle of that beautiful chaos that I learned one of life’s simplest truths: food doesn’t have to be fancy to be satisfying. A bowl of steaming rice and sautéed veggies made with care could taste like a five-star meal when shared with the right people.

My love for cooking didn’t fully bloom until I went to college. Tight budgets, tiny dorm kitchens, and unpredictable schedules forced me to get creative. I started experimenting with whatever I could find at local markets and convenience stores. Slowly, I discovered that I actually loved the challenge of making something delicious in under 30 minutes. My friends started coming over just for dinner. That’s when it clicked: cooking fast didn’t mean sacrificing flavor — it meant being smart, resourceful, and a little bold.

From Notebooks to Blog Posts

After graduating and juggling full-time work with life’s other hats — partner, parent, friend, neighbor — I kept refining my knack for speed cooking. I filled up notebooks with scribbled-down recipes, tips for shortcut sauces, and weeknight meal hacks. At some point, a friend joked that I should start a blog.

In 2020, I finally did.

Express Cook Book was born from a desire to share the recipes that had saved me time and again. It’s for the people like me — those who love food, crave flavor, but just don’t have hours to spend in the kitchen. Whether you’re a working parent, a student, or someone who simply doesn’t want to spend your entire evening cooking, this blog is for you.

My Philosophy

I believe in three things when it comes to cooking:

  1. Speed matters. Time is a precious resource. My goal is to get you from kitchen to table in 30 minutes or less — with real ingredients and big flavors.
  2. Flavor comes first. Just because it’s fast doesn’t mean it has to taste bland. Every recipe here is tested and tuned to make sure it delivers.
  3. Cooking should be joyful, not stressful. I want to take the pressure out of weeknight meals, last-minute lunches, or spontaneous dinner parties. Cooking should fit into your life, not take it over.

When I’m not cooking or blogging, you’ll probably find me sipping coffee on the back porch, flipping through cookbooks, or trying to convince my kids to try something green. I’m also a huge believer in community — food is meant to be shared.
